An all-time favorite ……  my favorite deviled eggs recipe!

This deviled eggs recipe is a Thompson family favorite and a great way to use the surplus eggs we have from our chicken house.

This deviled eggs recipe is a favorite of mine.  It was my Nana’s but it is timeless. We have our own free ranging flock of buff orpington chickens that provide us with a lot of beautiful eggs.

Free Range Chicken Flock
Our chickens free range and are very healthy because of their varied diet.

When the surplus builds up I have to use them up so I make pickled eggs, deviled eggs, quiche, omelets, and more.  Needless to say over the years I have perfected a lot of egg recipes.  Having our own flock of chickens is great.  You can’t imagine the difference in the egg quality unless you see it.  Check out this comparison picture below.

The egg on the right is from our hen house from our Buff Orpington hens. The egg on the left came from a box of “Extra Large” eggs I bought at the local general store.

It’s hard not to have success with any egg recipe with gorgeous eggs like these! Having your own backyard flock is worth the effort and I highly recommend the buff orpington as a breed.  They are the Golden Retrievers of the chicken world – friendly, happy, and very adaptable to the cold weather we have here. Nana’s Deviled Eggs Recipe is an old family favorite that is timeless!

  • Author: The Wilderness Wife & Nana Smith
  • Prep Time: 15 mins
  • Cook Time: 15 mins
  • Total Time: 30 mins
  • Category: Appetizer
  • Cuisine: American

Ingredients

Scale
  • 6 Hard Boiled Eggs
  • 1/4 c. mayonnaise or salad dressing
  • 2 tbs. very finely minced onion
  • 1 tsp. mustard – sometimes I use Dijon but mostly yellow mustard
  • dash of salt
  • Paprika

Instructions

  1. Shell eggs and cut in half lengthwise.
  2. Remove yolk and set aside intact whites.
  3. Mash the yolks and add the rest of the ingredients to the yolks. You may adjust the amounts of the ingredients to your taste.
  4. Stuff the egg whites with the yolk mixture. I sometimes do mine with a piping bag to make it more decorative.
  5. Sprinkle with paprika.
  6. Serve on tray or plate garnished with parsley.
  7. Keep well refrigerated until serving time.

    I love that you added onion in your eggs, they would add just that extra kick!     That is the same recipe I use for Deviled Eggs. Once in a while I had a tablespoon of homemade pickle relish. I have been saving juices to make pickled eggs, but keep forgetting to do it. Would love to know how you do yours. thanks for sharing with SYC.

    Those eggs are too pretty to be devilish! Do you have trouble with fresh eggs not peeling well? I get fresh eggs from the co-op and when I peel them they always make a mangled mess which is why I wind up with egg salad and not deviled eggs.

      Yes, I used to run into that problem but then learned from an old Amish woman that if you heavily salt the water you boil the eggs in, the fresh eggs will peel easier. Try it…it does work!

      Just a touch of onion gives a little depth of flavor to the mix. Having your own backyard flock is worth the effort. Hope you have the chance to do it someday!

    Nothing beats a great deviled egg and I love how they have become popular again. So many stores are now carrying them for a quick and easy snack! The fact that you raise your own chickens is so impressive. I just love seeing those little things out in the yard scratching the ground and and break into a sprint when startled!! LOL

    My brother has chickens and we have occasionally got eggs from them but they live too far away to do it on a regular basis. But what a difference fresh makes!

    Mmm, that recipe sounds great! When I make deviled eggs they’re pretty similar, but I put a tiny bit of sugar in the yolk mix cuz my husband likes them a bit sweet. 🙂 Thanks so much for sharing this recipe at my link party!
