After tonight there will be a lot of “slightly used” pumpkins around that shouldn’t be allowed to go to waste. I light my Jack o’ Lantern using a glow stick so as not to ruin the flesh. It’s been kept nice and cold outside for the last few days with our northern Maine chilly temps – 41 degrees today. So tomorrow I will dig out a few of my favorite pumpkin recipes and put my buddy Jack to some good use. I’d like to share 5 of them with you now.

your pumpkin chutney looks yummy! too bad my pumpkins have already turned to mush—too many freezing nights with a thawing daytime temperature. its a neat science experiment for the kids, though.
Those sound delicious! I’ve never heard of pumpkin risotto but it seems like a match made in heaven. Thanks for linking up to Merry Monday!
