Best Zucchini Fritters with Dill and Chive Sour Cream Sauce Recipe

These fritters are good to eat and good for you. The zesty parmesan and rich sour cream flavors blend well with beef, pork, poultry or fish.

Ingredients

  • Fritters:
  • 2 medium zucchini, grated
  • 1 1/2 tsp. salt
  • 1/3 c. freshly grated parmesan cheese
  • 1/4 c. mozzarella cheese
  • 1 clove garlic, finely minced
  • 1/4 c. shallots, finely minced
  • 2 tbsp. chopped dill
  • 2 tbsp. chopped chive
  • salt & pepper to taste
  • 1/4 c. flour
  • 1 large egg, beaten
  • 3 tbsp. olive oil
  • Dill & Chive Sour Cream Sauce
  • ¼ c. mayonnaise
  • ¾ c. sour cream
  • 2 tbsp. fresh chives, chopped
  • 2 tbsp. fresh dill, chopped
  • pinch of salt
  • pinch of white pepper

Instructions

  1. Grate zucchini and place in colander.
  2. Sprinkle zucchini with salt, toss in colander and allow to drain in sink for 30 minutes.
  3. Put cheeses, garlic, shallot, dill, salt & pepper, and flour in bowl and mix.
  4. Put zucchini in cheesecloth or kitchen towels and squeeze to get as much liquid out of it as possible. This is an important step.
  5. Add grated squash to dry mixture and toss till thoroughly combined.
  6. Add egg and combine thoroughly.
  7. Heat oil in a non-stick skillet.
  8. Drop spoonfuls of zucchini mixture into skillet and flatten them with spatula.
  9. Cook for 3 minutes or till golden on one side then flip and cook for 4 more minutes on the other side.
  10. Darin on paper towels.
  11. Dill and Chive Sour Cream Sauce
  12. Prepare the sauce first.
  13. Reserve a pinch of the chives and dill for garnish.
  14. Mix all ingredients together in a bowl. Allow to sit in refrigerator while you prepare the fritters so the flavors can infuse into the sauce.
  15. Garnish with the reserved herbs.
