    what do you think about adding ground/shredded turkey or chicken to this?

      I love that idea. I I’m going to try it. I will probably cook the turkey separate and add some thyme and sage to it, and drain off any additional liquid. I’ll then combine it with the finished risotto mixing it in thoroughly. Love the idea and thanks for the suggestion!

    Your pumpkin risotto looks amazing. I love risotto, but have never tried making it with pumpkin. Thanks for the recipe and how to roast a pumpkin.

    I love risotto, but I so rarely make it because it’s so time consuming to stand by the stove and stir.

    I love the idea of making it in a slow cooker.

    This looks beautiful and yummy and it’s perfect for me since it is gluten free and a new take on rice which I get sick of sometimes. This risotto would make Gordon Ramsey proud.
