what do you think about adding ground/shredded turkey or chicken to this?

I love that idea. I I'm going to try it. I will probably cook the turkey separate and add some thyme and sage to it, and drain off any additional liquid. I'll then combine it with the finished risotto mixing it in thoroughly. Love the idea and thanks for the suggestion!
