Oven Roasted Vegetables

Ingredients

  • Variety of vegetables cut in 1 inch cubes
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 425 degrees F
  2. Take a half-sheet pan and spread the vegetables out on it.
  3. Drizzle the veggie cubes with olive oil and sprinkle with salt and pepper.
  4. Toss to insure even coating.
  5. Roast in oven for 15 – 25 minutes until veggies are tender.
