Raspberry Shrub is an old Maine standard.  When the wild raspberries ripen toward the end of July you can head out on the logging tote roads and find miles and miles of raspberry patches that grow in where the loggers clearcut the forest.

Ingredients:

Fresh Raspberries

White Sugar

Cider Vinegar

Pick thru the fruit discarding any soft or moldy berries.  Place the fruit in a glass bowl or container and cover the fruit with cider vinegar. Let stand overnight., then strain and discard the berrie pulp.  To the juice add 1 pint of sugar to each pint of juice.  Put in a saucepan and boil freely for at least 20 minutes. Bottle after it cools and store the bottles in a cool place (like a root cellar). Add  1 1/2 tbsp. to a glass of ice water and stir.  A refreshing summer drink. Y ou can add a shot of liquor to it if you want.
